I lied.

Clearly I’m not “back in action” as previously posted and I apologize for that. Honestly, my neglect cannot be written off for just one reason…
  • Blogspot is blocked at work…which may or may not be where I used to blog from…eeek!
  • I didn’t have internet at my apartment until this week! City wide internet just recently reached to my little corner of town so now it’s affordable, wireless and not Comcast!
  • Since the more recent “shift” in my life…new job, newly single…I have been trying to stay busy and successfully so! Happy hours, grabbing dinner with friends, getting up to the cabin, baking, playing volleyball, soccer and kickball – I just haven’t made time for this little blog ‘o mine!
  • I don’t have a camera. I do realize that reading this can be super boring with out visuals. I lost my camera to the streets of downtown (literally, it fell out of my purse) on New Year’s Eve. However, a little birdie told me I might be getting one for my birthday. (Thanks, Mama!)

Excuses, excuses – I know! I hope you all accept my sincerest apologies…here is a yummy recipe that will hopefully win you back.

Secret Ingredient Chocolate Chip Cookies
makes 4 dozen cookies

Ingredients:

-2 sticks unsalted butter, at room temperature
-3/4 cup brown sugar
-1/4 cup granulated sugar
-2 eggs
-1 tsp vanilla
-2 1/4 cups all purpose flour
-1 packet instant vanilla pudding
-1 tsp baking soda
-1 tsp salt
-2 cups chocolate chips (this makes for very chock-full cookies. If you prefer a higher cookie to chocolate ratio, decrease the amount of chips!)
Directions:
1. Preheat oven to 350 F.
2. Cream butter and sugars in a large mixing bowl until light and fluffy. Add the vanilla and eggs and continue to beat. Mix in the pudding mix until fully combined.
3. In a separate bowl, combine flour, baking soda, and salt. Gradually add flour mixture, beating until combined. Stir in chocolate chips.
4. Drop tablespoons of dough onto ungreased cookie sheets. Bake for 10-12 minutes.
